Jill Zimorski In July 2006, Jill Zimorski was appointed beverage director for Café Atlantico, the popular Penn Quarter 100-seat restaurant located at 405 8th Street NW, which is also home to the six-seat minibar by josé andrés. As beverage director, Jill buys, inventories and maintains the evolving and impressive wine list at Café Atlantico, as well as leading monthly wine educational classes for all seven restaurants within José Andrés' ThinkFoodGroup. Zimorski is Certified Sommelier through the Court of Master Sommeliers and has completed the Advanced Certificate Course offered through the Wine Spirits and Education Trust. She is also a Certified Specialist of Wine through the Society of Wine Educators and a Certified Spanish Wine Educator. Before joining the José Andrés' ThinkFoodGroup team, Jill Zimorski spent two years at Charlie Palmer Steak, where she was the restaurant manager overseeing the general operations of the 200-seat restaurant. Jill was also responsible for training, hiring, and scheduling of the staff. When Jill Zimorski came to Washington in 2003, she was appointed assistant general manager at Palette, located in The Madison Hotel. Jill was an integral part of the opening process, contributing to the conceptual planning, menu creation and beverage program development. Jill Zimorski graduated from the University of Virginia in Charlottesville, VA, with a Bachelor’s degree of Arts in Sociology, while also finding time to work at the Orient Express’s Keswick Hall. After graduation, Zimorski served in management roles in two local restaurants including the Metropolitan Restaurant and Mas, which earned the recognition as the 2003 “Best New Restaurant” in Charlottesville, awarded by C’VILLE Weekly, during her tenure.
